Shrimp Saganaki
Ingredients for 2 people
6 large Shrimps
1 cup grated tomato
1 chopped onion
2 garlic cloves, chopped
A shot of white wine
Salt & pepper to taste
130 -150 grams feta cheese
Remove the shells from the shrimps, place the shells into a saucepan with water and make a broth with them.
For the tomato sauce:
Add the chopped onion, chopped garlic, grated tomato, salt and pepper to a pan and stir well adding the shrimp broth and allow it to simmer until the sauce thickens. Place the shrimps in a separate pan with a little olive oil, and chopped garlic and stir fry for a couple of minutes adding a dash of wine. Add the tomato sauce and boil for another 3=4 minutes. Finally add the feta cheese and allow the mixture to boil for another minute.
