Eggplant Rolls stuffed with cheese
(Melitzanes Bourekakia)
Ingredients for 2 people
500 gr. beef shin
2 onions
1 soup spoon tomato paste
250 gr. chopped canned tomatoes
50 gr. butter
Bouquet of spices (cinnamon, cloves,
pimento,bay leaves) Salt & pepper
100 gr. olive oil ½ litre red wine).
Preparation:
Melt the butter, add the olive oil and sauté the meat until it is browned. Add the chopped onions sauté together with the meat. Then add the tomato paste and wine and cook until the wine has evaporated. When the sauce has thickened, add the canned chopped tomatoes, and enough water to cover the meat. Turn down the heat and simmer for approx 1 hour.
