Loukoumades (Greek Doughnuts)
Ingredients for the dough:
2 cups lukewarm water ( 40 degrees Celsius)
2 pkts dry yeast (or approx 60 grams fresh yeast)
1 tablespoon sugar
1 tablespoon salt
3 ¼ cups all purpose flour
For the topping:
Honey
Cinnamon
Icing sugar
This recipe is adequate for 100 doughnuts.
Preparation time: 1 hour
Cooking time: 1 hour
Dissolve the yeast in the water and place it in a mixing bowl together with all the other ingredients. Mix together for approx 2 minutes at a high speed until the mixture becomes smooth. Cover the mixture with cling film and place in a warm place allowing the dough to rise. To make the dough rise quicker, place the bowl in a preheated oven at 50 degrees Celsius. Switch the oven off and leave the dough to rise for approx 1 hour until bubbles rise on the surface of the dough. Knead the dough, cut with a spoon, dip in water and fry the pieces of dough in hot oil. Make sure to dip the spoon in water every time dough is scooped out of the bowl so that the mixture doesn’t stick to the spoon. Using a perforated spoon, immerse the doughnuts in the boiling oil and fry on all sides until they are uniformly golden in colour. When you remove the doughnuts from the oil, dribble a mixture of hot honey, cinnamon and crushed walnuts onto them. If the honey is very thick, add a little water to dilute it slightly. The doughnuts should be served freshly fried and hot.
