KYKLOS DESIGN

Chicken with Vegetables


Enough or 5 servings

Use either 5 chicken breasts or 5 chicken thighs

drumsticks cut into fairly small pieces

2 medium onions

Olives (1 tea cup) Remove pips and chop

into small pieces

5 fresh tomatoes cubed

150 gr. button mushrooms fresh or canned

5 green peppers (the peppers should be cut into 3 pieces)

3 large red peppers (peppers from Florina) cut into smallish pieces

2 chopped garlic cloves

½ bunch chopped parsley

Pinch of sweet paprika, pinch of ground black pepper & pinch of salt

2 bay leaves

Olive oil (Greek coffee cup)

1 soup spoon butter


Chop onions and sauté with butter & oil; add chopped chicken and cook until it is browned all over. Add the chopped tomatoes, red and green peppers, bay leaves, chopped parsley, salt, pepper, sweet paprika and enough water to cover mixture. Simmer for approx 1 hour until the ingredients are cooked and the sauce thickens.

Serve with either rice, fried potato chips or potatoes baked in the oven.
