Chicken with a creamy feta mousse
Ingredients:
I chicken breast
Feta cheese 100 gr.
Fresh cream 70 gr.
Yoghurt 30 gr. Strained
Grated lemon rind
Grated ginger
Chives
1 clove of garlic
1 soup spoon olive oil
Pinch of smoked paprika
Beat the feta in a blender with the fresh cream until it has a smooth texture.
Add the yoghurt and garlic and olive oil to the creamed mixture. Lastly add the grated lemon rind and grated ginger and the chives.
Fillet the chicken breast salt and pepper it.
Add a pinch of smoked paprika to the olive oil and either fry the chicken in a non stick frying pan or grill it. Be careful that the chicken does not become too dry during the cooking process.
Remove the chicken from the heat and cover it with the feta mousse.
Garnish with a refreshing green salad with rocket and form into a roll.
