This typically Corfiot dish is made with salted cod.
4 pieces of salted cod
Olive oil (2/3 tablespoons)
1 medium onion
Pepper to taste
6-8 small potatoes
¾ garlic cloves (optional)
Enough water in which to simmer the fish
Juice of 2 lemons
Preparation:
Rub or shake off as much of the salt on the cod as possible and then soak the pieces of cod in water for between 3-4 hours changing the water
at least 3 to 4 times.
Peel 6 to 8 small potatoes and chop them in half, peel & chop the onion and sauté it in olive oil until transparent. Add the fish and halved potatoes, the garlic cloves if desired, pepper to taste and enough water to cover the mixture. Simmer the ingredients together on a low heat for approx 45 minutes. Cook until the liquid thickens. You might need to add some water if the mixture is too thick. Add the juice of 2 lemons and allow the mixture to simmer for a couple of minutes before serving. Be careful not to add any salt to the ingredients as the salted cod contains salt even although it has been soaked in water.
